Enchiritos: A Burrito and Enchilada in One

Mexican food is a big family fave at our house so we like to have several options to choose from. This is a newer addition to our meal rotation, and it's a hit!

What you need:

  • 1 lb ground turkey or ground beef (or use up cooked steak or chicken - cut up or even go vegetarian)
  • 6 large flour tortillas
  • 1 can (16 oz) refried beans (we like using the black refried beans)
  • 1 can (10 oz) red enchilada sauce (our fave is La Victoria brand)
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • Optional: black olives, chopped onions, sour cream and/or guacamole for topping

What you do:

1. Preheat oven to 375°F. Brown the ground turkey or beef until fully cooked. Drain any fat.

2. Mix in taco seasoning and water. Simmer for 2–3 minutes until thickened. Add refried beans and mix until combined and heated through.

3. Add the beef and bean mixture onto each tortilla. If using, add black olives and chopped onions. Roll up like a burrito and place seam-side down in a baking dish.

4. Pour enchilada sauce evenly over the top. Top with cheddar and Monterey Jack cheeses.

5. Bake uncovered for 20–25 minutes until hot and bubbly.

6. Serve with extra sauce spooned over the top, and optional toppings if desired.
